Ingredients:
- 150g smoked salmon
- 150g of salmon
- 1 apple
- 50g raspberries (fresh or frozen)
- 5 tbsp raspberry juice
- 1 tsp maple syrup
- 1 tsp olive oil
- Pepper
- Dill
- Raspberry Flavor Pearls
Preparation:
- Wash the apple and cut it into very thin slices with a mandolin. Cover the baking tray with a silicone sheet and place the apple slices. Dry at 150 °C for 20-25 minutes.
- Place the raspberries and raspberry juice in a small saucepan. Add the maple syrup and let it simmer for a few minutes. Let it cool.
- Cut the two salmons into small cubes and season them with olive oil and pepper. Add the raspberry coulis and mix.
- In a circle, alternate the slices of dried apples with the salmon tartare. Decorate with dried apples, dill and a few Raspberry Flavor Pearls.
