Ingredients:
Biscuit
- 200g of petit beurre type biscuit
- 100g melted butter
Cream
- 60g sugar
- 30g of water
- 4 sheets of gelatin
- 250g of fresh cheese
- 1 tsp liquid vanilla
- 33cl of whole liquid cream
- 16 raspberries
Passion jelly
- 250g passion fruit puree
- 50g sugar
- 3 sheets of gelatin
Dressage
- Raspberries
- Passion Flavor Pearls
Preparation:
Step 1 Preparation of the biscuit
Mix the biscuits and mix them with the melted butter. Spread the mixture on the bottom of your springform pan. Flatten the surface and set aside in a cool place.
Step 2 Preparation of the cream
Soak the gelatin sheets in water. Mix the cream cheese, sugar, vanilla and water with a mixer until smooth.
Heat the softened gelatin for a few seconds in the microwave and add it to the previous mixture.
Whip the liquid cream into Chantilly cream and gently incorporate it into the mixture.
Put the cream on the biscuit and leave in the refrigerator for about 4 hours.
Step 3 Preparation of passion fruit jelly
Soak the gelatin leaves in water.
Heat the passion fruit and sugar in a saucepan until boiling. Add the drained gelatin off the heat and mix.
Let it cool then put the mixture on top of your cheesecake cream. Before tasting, put your cheesecake in the refrigerator for about 2 hours.
Step 4 Dressage
Remove the mold. Arrange some raspberries and Passion Fruit Pearls.
