Ingredients:
- Slices of basic panettone
- 500g of mascarpone
- 3 tablespoons of icing sugar
- Coffee to taste
- Cocoa Powder
Directions:
- In a bowl, mix the mascarpone with the egg yolks and icing sugar. Separately, whip the egg white until stiff and incorporate it into the mascarpone cream.
- Add the panettone crumbled with a knife to the mixture and let it rest in the fridge for half an hour. In the meantime, roll out the slice of panettone with a rolling pin and cut out discs with a pastry cutter.

Plating:
Arrange some sifted cocoa powder on a serving plate and place the panettone discs on one side. Using a pastry bag, form tufts of mascarpone cream onto the plate. Add the dish with coffee beans and accompany with a cup of coffee to wet the discs. If desired, decorate the dish with ground coffee and serve.
