Instructions

  1. Grate the apples, then squeeze the lemon juice over them.
  2. Mix the flour, cinnamon, cassonade, baking powder and salt. Then add the eggs, cream and oil and mix together. Fold in the grated apple.
  3. Divide the dough between the muffin moulds, filling them three-quarters full. Then place in the oven at 200°C (gas mark 7) for 15–20 minutes, to obtain firm, moist and golden muffins

 

Chef's Tips

You could also dice the apples and caramelise with a knob of butter and cassonade. Allow to cool before adding to the dough.
