Ingredients
- 320g flour
- 100g La Perruche cassonade
- 3 pinches of table salt
- 25cl pouring cream
- 7cl oil
- 3 eggs
- 3 apples
- 1 lemon
- 1 teaspoon cinnamon powder
- 8g of baking powder
Instructions
- Grate the apples, then squeeze the lemon juice over them.
- Mix the flour, cinnamon, cassonade, baking powder and salt. Then add the eggs, cream and oil and mix together. Fold in the grated apple.
- Divide the dough between the muffin moulds, filling them three-quarters full. Then place in the oven at 200°C (gas mark 7) for 15–20 minutes, to obtain firm, moist and golden muffins
Chef's Tips
You could also dice the apples and caramelise with a knob of butter and cassonade. Allow to cool before adding to the dough.
